If you take the chicks away after they hatch then will they be more tame?

Yes but then you would obviously have to provide a heat lamp and brooder; not to mention that your hen will be heartbroken

Has anyone noticed any difference in the health of chicks that were incubated and raised by people vs those that were hatched and raised by a broody?

Yes! Chicks hatched and raised by hens seem healthier, more-in-tune, brighter and even happier!

Seriously!! But, I'm not saying that chicks raised by us humans aren't happy and healthy too. They are just more so with a hen because they are being raised naturally.
