Not sure what you mean about them turning over on the sides then.
I haven't noticed any change in how often the humidity needs checked. If you are used to using still air incubators, forced air incubators do need to be checked more frequently than still air.Those of you that have hatched with this in the winter months, did you struggle at all with keeping the humidity up? How often are you needing to add water? I thought I've been struggling with it a little bit and it's GOT to be user error. Any tips?

I check mine morning and night.
There are three trays for water. You do need to be careful about which tray you are adding water to. You only want to fill the inner-most tray to start with.
