Totally agree on the Dark Cornish. The finished bird looks a lot like what you get with a Cornish X without all the mess and mortality. Takes longer to grow out, but the results look to be worth it. I Will be talking with Janet about eggs for next year.After seeing how the dark Cornish dressed out I'm thinking pretty hard about adding some of them to my flock next year as well. I'm considering a smaller coop for raising some of my own meat birds. Thinking Cornish and Bresse will be added here next year

And processing definitely isn't for everyone. I have a few 'pets' that will never have to worry about processing time, but most of my birds have a purpose, and I just try to make sure they have a great life and only one 'bad day'. I totally respect people who can't do it, it all depends what you want to get out of your flock.
