We butchered 5 muscovy drakes this past weekend. They were still young, but wanted to be able to handle them without their flight feathers.
Cooked the livers the same day, and they were really good. Pressure cooked then fried the gizzards yesterday, and they were gourmet quality, although I just had one.
I don't eat the muscle meat, but saved some in the freezer for husband, and the kitties had a raw bowl in fridge to eat.
