Inspiration for Butchering Day

PC showed us how to process chickens at chickenstock, now I'm hooked. We'll be ordering our own meet birds soon.

We've got 15 coming in November, we've got the cornish X rocks, its insane how fast they grow. It has def. been a learning experience. I still have to get my df to do the "dirty work" but I don't mind the plucking. For us, it seriously makes us think about the food we eat and whats been added, pumped or taken away from it/into it. Having chickens has changed how we live, both of us wanting a "greener" and healthier way of life.
 
I processed my first bird ever today. Mostly thanks to this site and other how to's on the net. Here is my first processed duck.

I'll try to remember to get "after" roasting photos. I think I am going to save him for the 4th.

This is a great idea for us "newbies" who are thinking about raising a few meat birds. All I had to do was show my husband Steve's picture of the 10 pounder and merageriemama's beer can chicken and he's ready to go. Thanks for the inspiration!!

OMG... This was sooooo delicious, and so simple!

Wash duck and poke skin all over to allow the fat to escape. Rub salt and pepper over the duck. Cut up an orange and stuff in the cavity. Bake at 350 for 2.5 hours.

At 2.5 hours mix in a saucepan 1 cup cranberry sauce, the juice and grated rind of one lemon, 1/4 cup of brown sugar. Heat till boiling and smooth. Spoon over duck and bake for a half-hour. Can add alcohol to this sauce if one desires. My duck was baked virgin and was delicious.

Super yummy! And the best part is knowing he had a very good life.

I was just about to type that your chicken looks an awful like a duck! Then I read more carefully.

We had a duck yesterday, too. Duck skin is proof god loves us.
