Inspiration for Butchering Day

I forgot to mention I did pour a half-kettle of boiling water over the duck about 30 minutes into roasting.

It was worth drooling.

My mom just sampled it and she described it as a cross between pork and chicken. I think for those who have never had it, it is a fair comparison. I think it tastes like duck!
