Interesting article on egg refrigeration

Right now we only have 3 girls laying and we use the eggs up so fast we don't refrigerate. When our 13 younger chicks start to produce, we'll have to figure out the "refrigerate/not refrigerate" thing.

We currently sell garden produce at a local farmer's market and I've noticed the other vendors that sell eggs keep them in coolers. We hope to have eggs to sell from the young girls in August or September.
 
I've read that you don't need to refrigerate for about three days.

I would not leave my eggs unrefrigerated for longer than that if they don't get eaten by then.

Would be interested in other views
 
Well according to the article, people in Europe don't refrigerate their eggs at all. Apparently you don't have to refrigerate them unless they have been washed. I wonder how long they keep the eggs before they throw them out? I will have to ask my European relatives about this.
 
This has always kind of concerned me:

'After an egg is refrigerated egg, it must be kept at that temperature. "A cold egg left out at room temperature can sweat, facilitating the growth of bacteria that could contaminate the egg," ......'
