    They're bigger! One duck egg equals two chicken eggs in terms of baking and cooking.

    One duck egg also = + 1T or so of oil, so if you have a recipe that calls for say, 3 eggs and 1/4 cup of oil, you can get by with 2 or 3 duck eggs and no added oil. :) HTH
