you are very restricted on what foods you can eat?

I have ulcerative colitis, so I'm restricted on what foods I can eat. No-No's that I have figured out so far: Most fruits and fruit juices, with the exception of bananas, peaches and pears. No tomatoes or corn. Very few legumes, although I can cheat a bit on those. No dairy products except hard cheeses. Eggs in limited amounts. No soy.

Pretty much limited to meats and potatoes, both white and sweet. I'm not sure how to make a healthy vegetarian diet within these parameters.

Not sure what ulcerative colitis is, but it sounds similar to my diverticulosis--only worse! I'm not supposed to eat a LOT of things--seed & corn related--but I have figured out that I actually can, in extreme moderation, as long as I keep the fiber content up!
Cant offer any advice, but I do feel for ya...

Of course. Unless you can't have greens (VERY important no matter if you're a vegetarian or not) and can't have nuts (good source of protein) I'd consider the diet fine.

Also, Quinoa and Amaranth are very good things to add, too. Lots of protein and minerals, and they aren't a grain but can be used like one.

I could eat alot of the foods on my forbidden list, if I take the medication to control the symptoms. Problem is, the damage is being done to my gut when I eat those no-no foods, regardless of whether I have symptoms or not.

The only reason I don't fix the dark greens right now is because my DH is on coumadin therapy and can't have them. We make a pretty sad pair. He won't eat certain foods that he loves simply because I can't have them and vice versa.

Kat, if you do something like this..be veeeery careful to make sure you REALLY get the nutrients your body needs to stay healthy.
I would actually make an appt with your doc, (or call them)..and maybe they can refer you to a nutritionist and they will be able to go over a healthy menu for you.

Miz Red, I am going to see the gastroenterologist next week and discuss it with him.
