Is it ok to put this thermometer / hydrometer inside the incubator?

There are strong opinions on both sides of the "Hatching in an E gg Carton" issue. I haven't tried it, so, I'll keep my opinion to myself. Do a search for posts on it and you'll see what I mean.
 
I believe you. It makes sense to me. Id rather do it the natural way in which chickens do it; laying them down on their side.
 
I've used wet paper towels twisted into wiggles around the eggs, it keeps the eggs from rolling around and the biddies can walk all over it. And as for adding water, use the finger-over-the-top-of-a-soda-straw method, it's a perfect fit through those vent holes.
