Just as a general rule of thumb, is it okay to candle every other day after Day 10 with the exception of after Day 18?

That's the problem, I have NO idea how long she has been sitting, it has been AT LEAST sixteen days but it could be on day 22. I'm not sure, I was house-sitting when she started. I was doing research and I read that water candling was safer than light candling. I don't know, I'm so stressed :/ I hope I have hatchers...
I see your pointMany of us have hatched with Broody's, Most of us don't bother the broody at all. If your not sure of the day then just leave her alone and allow her to do what hens do best. The more you mess with her and the eggs the less chance you have of a successful hatch. If she is at the least only been sitting for 16 days then what's the harm in giving her another 5 days?
I'll just leave her be and keep an eye out for any fuzzies from afar. I really hope I have some babies. She's sitting on at least thirteen eggs. I'm very neurotic so I'm super hyperfocused on the chicks and making sure their safe-which, ultimately, could do them harm if I continue to check.
