She might be cool. When the weather gets colder, ventilation goes further, so you don't need as much ventilation. Putting some plastic around the coop would probably help, but leave gaps for ventilation because that's always important.So is she not laying because she is cold?
Although it is normal to lay less eggs because there is less daylight. You can put a light in the coop to help her lay more eggs, but I've never tried that, and I don't know if it's good for them or not. I think they need a time of rest (during the winter).
Is she getting calcium? Feed the hens egg shells back to them to provide enough calcium. You can crunch them up, or blend them in a blender

And make sure she's eating enough layer food. My hens get extra food types (left over human food, and bird seeds and whatever they find in the yard) so the way I encourage them to eat more layer feed (nutritionally packed for egg layers) is that I soak some in water before giving it to them. They love it like that! Sometimes I add some extras to get them eating it, like peas, or some butter to make it extra tasty.
