Is my incubation count correct?

Ok. So we put our eggs in Thursday night. It is now Sunday night. First time ever incubating and am anxious to candle them to be sure of developement. I have been told not to until day 7. (No clue why) so if day one was thursday night to friday night then day 7 would be friday night? Or thursday night? And am i on day 3?

In on Thursday, Friday at the same time would be day one, Saturday at the same time would be day 2, etc. You can candle any time you want(I would not candle the last 3 days---myself) but there is very little to see till close 6 or seven days.

I candle on day 12 and day 18 as I am going into lock-down, But some candle to check air cells etc, I am not one that has a interest in the daily change so I do not candle earlier than day 12.
