Actually, Ideal Poultry does not sell true Ameraucanas. Like so many hatcheries, they cross either Araucanas or Ameraucanas (both which lay blue eggs) with other breeds to produce offspring that lay colored eggs, and them market them as Araucanas (true Araucanas are tailless) or Ameraucanas [often misspelled Americana or Americauna (at least Ideal spells it correctly)], when in fact they are Easter Eggers (hybrids that lay different colored eggs (olive, green, beige, or even pale pink or gold). Easter Eggers are usually fairly docile and quiet birds, but can vary a lot from bird to bird, depending on what breeds were used in the cross. If you want to purchase true Ameraucana chicks, Meyer Hatchery sells (true) Blue Ameraucanas. You can see them at https://www.meyerhatchery.com/produ...D=BAMS&grd_prodone_filter=PRODUCT_ID = 'BAMS'

Hens as a rule aren't quiet creatures. Really doesn't matter on the breed, each individual bird has the potential to be quite loud. They cluck and squawk and once they start laying, they're often so proud of themselves they want the entire neighborhood to know what they've accomplished.
