I'm with Oregon on this one- sometimes people don't want to hear the details but if you can promise (and follow through on it, of course) that their rooster(s) will be respected and treated humanely, that might be all you have to say. If they are worried about them being eaten, they will ask "are you going to eat them?" and that's the time to be honest and tell them so.
