Is three hours enough time to cook adult rooster in a pot?

I wanted to make chicken soup, and I cooked the rooster for about two hours before adding the vegetables, and only then had I decided to check if it was enough time to turn soft enough to eat the meat.
The sources I found say I should cook it for at least 6 hours, should I just feed it to the dogs and eat the soup without the meat?

I cook it until the meat comes off the bones. Sometimes it takes 3 hours, sometimes more. There is not a rule unfortunately.

Well, I tried it, and even though it isn’t as soft as I’d like it to be, it’s completely edible!

I pressure cook a 2 and half year old rooster in 40 mins increments with natural release until tender . Took a couple hours at 10lbs pressure. He was the best pulled chicken and broth.
