but can you do just a pen of italians and end up with itallian babies? Same for the other 3, can they be put as a single color and just produce the 1 color or do they need to be paired up like that?

Ideally I would like to pen off all my quail by color and be able to have only the parent color show up in the chicks. in a perfect world that is haha.

No, Manchurians and Italians are based off the Fawn mutation. The manchurian currently is that it takes the homozygous form of the fawn mutation, whereas the Italian takes the heterozygous form. Both varieties are located on the Yellow Y locus.

In the British Range, The Dark Range/Tibetan has a dark chocolate color plumage based on a double factor extended brown (E/E), the homozygous form. The heterozygous form make the color Rosetta.

So by separating the colors further, you will still get the the two forms of color for all 4 varieties.
