I am sure that you can make over some of your favorites to make them healthier and lighter fare as well. I subscribe to Taste of Home's Healthy cooking and they do this with a few recipes ever month. Also just checked out Rocco Dispirito's Now Eat this from the library, everything looks SO yummy and it's all under 350 calories! Good luck with your goal, I look forward to reading about what you try.

I've never seen it in a store or market here in my little corner of Texas. I live in a very rural area so I guess if I wanted some I would either have to hunt it for myself or order it on the internet. I guess I'll just stick with chicken, squirrels, ducks, geese, rabbits, turkey, venison or pork.

Ok I did take the quick route for the gumbo

I used Zataran's rice gumbo and prepared according to the directions then I add the alligator.
Then I diced up some green pepper and onion and pouched them.
when tender add to gumbo.

Simple and 1 healthy dish done!
I also made corn
and for my sweety I battered and baked some swai fish and some of the alligator.

Well it was fun and new.
I am feeling good about this resolution!

Sounds good, I have a pot of chicken gumbo and a challah braid on the stove for supper tonight. I made some cupcakes but they are a bit dry. I was thinking about putting a drizzle of something on them to moisten them up but I'm not sure what to put. Any suggestions would be helpful.
