Mmm Baklava!

1/2 package phillo dough (thaw and cut sheets in half so they fit in pan)
1 pound almonds, chopped
1 melted stick of butter
1-2 teaspoons cinnamon
1/2 cup white sugar
1/2 cup honey
1/4 cup water.

Thaw dough. Toss almonds with cinnamon. Spread 8 layers of dough on bottom of a baking dish (13x9) brushing butter on each layer. Add 1/3 the almonds, 2 more layers of dough and butter until the last of the almonds. Then top with 8 more layers of dough, each layer brushed with butter. Brush the top with butter. Cut the almond lasagna into diamonds or squares and bake at 325 for an hour or until deep golden brown. While baking, boil together sugar, honey, and water. Keep that hot until the baklava comes out of the oven. Pour syrup over everything and make sure it gets into each crack. Cool completely.

Serve "healthy dessert" with coffee or tea!

Ah Paklava (that is the Armenian word for it) I prefer it with pistacios and with a sugar syrup instead of honey. Also it is made with walnuts as well.

We make it here every few month and for all holidays. It is best to keep the syrup off to the side and put on each piece as needed so it does not get soggy

Back in the day my g-ma and mother and a heard of other Armenian women would gather and stretch out the filo dough by hand and then make it. It took all day s now we just buy the pre-made dough, but be sure to get the thinnest version, the thick stuff is for other pastries.
