potato leek soup: Ingredients - 2 tbsp unsalted butter, 1 large leek, thinly sliced, 4 cups chicken broth, 2 large potatoes (about a lb.) peeled and cubed, 1/2 tsp ground white pepper, 1/2 cup cream, salt to taste, 3 tbsp parsley, chives, or dill - chopped

1) melt butter in large saucepan over medium heat, add leeks and cook for about 5 minutes while stirring occasionally
2) Add broth, potatoes, and white pepper - bring to boil over medium heat, then reduce heat and simmer for 25 minutes (until veggies are tender)
3) puree the soup with an immersion blender until smooth
4) Add cream and salt, garnish with herbs

You can add cooked, diced ham to this recipe if you want (about 1.5 cups at step 4)

I do a potato soup just about the same add ham.
