I just ran across this thread by coincidence. DW makes a similar, mushroom barley soup. I will be making a Chili soup in a few days, so here is advance warning.
Just an idea on how to use up all that leftover turkey. I also use some surprising bean combos.
When I promise,,, I deliver

I like to do it Play,, by Play. Easier to describe process with pix.
These are the beans I used. I
did not use the Ham flavor packet included with these beans.
Rinsed,,,, soaked overnight,, and rinsed again.
Turkey carcass cooking to generate broth,, and easily removed tidbits of meat.
This is 4 cups of broth. I added additional 4 cups of water to cook beans.
The beans cooked on low for almost 2 hours.
My assortment of spices/seasonings
Here are some options for seasonings if don't have what I used.
I did not use these,, just showing what can be used as substitute.
Note; Chili seasoning is slightly hotter spice than Taco seasoning.
My assortment used.
Meat that I scraped, and diced off carcass. Skin, and fat, I discarded.
Some additional turkey meat I decide was good to add to my recipe.
Picked clean carcass
Meat added to the cooked beans.
Here are the spices, and amounts. Larger hills=Tablespoon
Smaller hills=teaspoon
Not shown is 1 Tablespoon of salt. (added)
I also did not have any cumin. That would have been 1 Teaspoon.
Ro-tel diced tomatoes, and my seasonings
Combined soup/chili cooked an additional 30 minutes, to combine all flavors
My 2 onions diced, and sautéed
Finished, and added to soup.

Notes; This came about when I needed to use up broth, and small tidbits of meat.
I just wing it with the amounts,, I posted general ideas on amount, and ingredients.
