I've received my Gooseberry Jam...I can't wait to try it. (I'm going to make a fresh loaf of bread)...Thanks so much!!!

7 cups thin sliced red onions (around 2 1/2 lbs) 4 cups sugar
1 1/2 cups apple juice 1/2 cup light brown sugar (I like Dark)
1/2 cup red wine vinegar 1 box SURE JELL LIGHT (NO SUGAR NEEDED)
2 t rubbed sage 1/2 T margarine or butter (you need this)
1 t pepper (black or white)

Measure 7 cups into 6-8 quart sauce pot. add apple juice, vinegar, sage, and pepper; mix thoroughly

Measure sugars into separate bowls. Mix 1/4 cup granulated sugar from measured amount and pectin into small bow. Stir pectin-sugar mixture into onion mixture in sauce pan. Add margarine. Place over high heat; bring to a full rolling boil, stir constantly. Immediately stir in remaining sugars. Bring to a full rolling boil and boil 5 minutes, stirring constantly. remove from heat; skim off foam

Ladle quickly into hot jars, filling to within 1/8 inch of top. Boil water bath 5 min
