Japanese rolled omelettes

I've been trying to use my pullet eggs but the girls keep cranking out more and more of them. I have been eating omelettes almost every morning. I saw this video yesterday and thought this makes the simple art of making an omelette even more fantastic.

I can see where that would use up a LOT of eggs even just one of them

Very entertaining, I'd seen this posted about here many years ago. Stuns me the skill these guys have flipping those bundles in the pan like that. It would be so great to go snacking one's way thru a neighborhood like that, having small bites or portions of the specialties of each shop.
