No one has made mention of Teague, TX, Scratch Ankle, Trash Hill, etc. All you talk about are the big cities and towns. What about all us little folks out here?
And then there is the piney woods of east Texas.

as far as I know, one authentic TEXAS dish is ... Frito Pie

(got the recipe directly from Frito factory in Texas, well before there was national distribution; we had to drive from Oklahoma down there to get Fritos ... then ...)

and no, there should never be beans in it !
 
Texas toast was created in Beaumont. I just read the story recently, but I can't remember the exact details. Apparently, it was a hit at this little restaurant, so they kept making it. It spread from there to just about any cafe or fast food joint that fries anything and needs toast to soak up the extra oil. Yes, we do eat it.
 
Texas has the best darned sausages and kolaches! If you are ever around the Deep South part of Texas, gotta stop at Prasek's in Hillje, Texas and get some of their kolaches and of course they've got a huge selection of other goodies like beef, chicken and turkey jerky.
