ETA: I think I will put a board across the top shelf and move the bottom light up so its a heat chamber.

I don't think that the fan blowing across the eggs would hurt them. I'll show your design to Randy and see if he has any suggestions. The shelving might be a problem. To me, it looks like they might be obstructing a good even air flow. He can help with figuring out your wiring also.
