I wish dairy could still be like it was, smaller herds on pasture. I also was raised with a herd of 70 milking jerseys in a barn from 1872 but I think those days are long gone.we had 65 of them as a child

I am making my first wheel of cheddar cheese. It is curing now and will be ready to try in 6 weeks. I hope it turns out!
