Keeping the Temperature Set

OK, just put the eggs in (11 for first hatch all barred rocks) I have had the incubator on all day to make sure the temp was set before I placed them and it was good at 100 all day. But I noticed when I got home today that it was up above 110? why is this, and how do I keep the temp at 100, I don't want to watch it 24/7 for the next 21 days, but I don't want to mess the eggs up either. The instructions on the incubator say to set it until the red light goes off and then it will flicker. I don't know, we'll see....
 
I'm around my home all the time, so no problem for me.. But after I put my eggs in the temp. did change.. Just barely adjust the thermostat until you get it where it should be.

I have 2 incubators going, the Hova 1583 with auto egg turner and the 1602n without turner..(Manually)

The 1583 was staying pretty constant but then I noticed it had moved to 101.. So once again I barely decreased the temp.

The 1602N took awhile to get stable after I put the eggs in.. I had to constantly keep moving the temp. control until it stablized at 99.2 to 100...

After I hand turn the eggs the temp gets right back so far..
