Can you do it w one hand while holding the chicken in the other?

I have not tried those but if you wrap the chicken in a large towel, small sheet, or something like that you can do it yourself. I keep hold of the feet with one hand as I work with the zip ties. Wrap it around the wings. You can cover the head if you wish but I usually don't.

I wear a long apron, creates a sling between my thighs to hold them on side/back.
Left arm holds them in place, can use both hands for ziptie and cutters.
Take practice, for both keeper and bird.

When you use legbands or zipties, remember to check them ALL regularly to make sure they are not pinching, too tight, have a twig caught in them, messing with scales, or damaged. This seems obvious, but when you have a lot it needs to be a regular checklist item.

There is a toe punch system too.

Yep, those and wing bands are basically piercings for identifying

And if they aren’t fully grown, you have to be careful about putting it on too tight because it will be really hard to take them off.

Toe punching is more like notching ears on hogs.
Ear tags are more like leg bands on chickens.
