Killing Chickens in Town

You really only need to slit the throat. Unconsciousness takes about one second. If they're in a cone, they won't move far. They bleed better this way than cutting off the head, or at least they did for us. There's a great sticky at the top of the meat section with good pics of the whole process, including where to cut, which is at the top of the neck, under the "chin." A minute of wiggling, then you can take the head off at your leisure.
 
ddawn is correct, they do bleed out much better by just severing the jugular vein as opposed to chopping the head off. That way the heart is still beating for a while and more blood is pumped out. A cone works well as it controls the wing flapping and slinging blood all over. Don't mean to be too graffic but this is what works best. Also no noise to speak of other than all the lip- smaking at the dinner table!

in the garage now (used to do them outside, but it's COLD here now!)

The only noise they make other than standard chicken noises (crowing etc) when it's dispatch time is wing flapping. I've not had one yet make any sort of vocal noise. It's over in a minute too. I contain everything by lowering them into a large bucket with a garbage bag in it, so they can flap in there and it keeps the blood contained.

Learn from me though - don't putz around and leave 5 of them crated (with water and some food) overnight. You'll have crowing wars from 5am on, they set my two boys off too. Nonstop crowing. For hours. (Everyone has their own crate, I'm not down with strange rooster fighting - but they still like to crow over each other!)

Hello, I saw your post and while it from a while ago, I am hoping you could answer a question from me says it shows your from the Brisbane Area. We have a rooster, and we have tried to have it re-homed, as it just crowing to noisy even when we bring him inside at night. We had no luck and all out ads had brought shady people who did not want us to see or visit the rooster so we have said No. We're thinking to avoid having him end up cock fighting, we might have to slaughter. You mentioned it you do it yourself but there are places you can have it done. Just wondering if you can recommend.
