knife... cannot find it from search forum

I had good information about butchering knife couple months ago.
Now I cannot find it.
It was a knife from swiss army thing (under different name maybe), and could buy from Amazon.
Now my roos are almost 5-6 months and I hate to admit that it is the time.
I need to buy a knife first before I do anything.
Thanks for any help.
 
It's not the Swiss army one, but Walmart carries (in the sporting goods department) a fillet knife, the brand name is Gerber, it comes with a sheath, holds an edge really well, and it's not very expensive. It's what we use for chickens, turkeys, deer. pork, what ever. I can cut up a whole deer with it, (not through bone, of course, I bend joints around, and cut connective tissues until I can pop the joint and dismantle it) and just touch it up now and then with a chef's steel.
 
A sharp knife is the best "brand"

An expensive knife that's dull will be outperformed by a cheap knife and a sharpener.

I have both - Walmart knives and a sharpener, and Cutco brand knives. They both cut well as long as I keep them sharp.
 
I've had the best luck with the soft "commercial" butchering knives you can buy at the hardware store. They re-sharpen in an instant and are usually very easy to clean, since they are plain steel with plastic handles.

Most meat packing plants issue this type of knife for good reason.
