oh no no no friend.. i've had KK's fresh off the belt and they are a distant second. i am here to tell you that there is some kind of magic that happens with God-fearin' germanic women meet yeast and flour.. and lard.

and yes i make my own lard! yeee haaa!

I do "butter creme" but it's not really because if you use just butter it doesn't firm up...

It's 1/2 crisco, 1/2 butter, powdered sugar, a bit of milk and vanilla. YUM YUM YUM!

Oh, and my mom always put "fluffy frosting" on angel food cake. It's sugar, hot water and egg white whipped to firm then throw in a bit of vanilla for flavor! OMG my sis and I make a batch just to eat - no cake required!!
 
Did everyone know that lard has a very bad reputation for no reason?

Previously all studies on saturated fats had been done with them all lumped together - butter, lard, shortening.

However, new studies have been done with the fats separately and we now know that ONLY trans fats (hydrogenated) clog arteries. It is true. I tried to find it for you all online, but I failed, but there was an article in Bon Appetit magazine last year called "The Good Fat" and it talked all about the new studies and about how lard and butter do not clog arteries at all and actually contain important vitamins and minerals and fatty acids that are essential to good health. Yes, it's true that they are all still FATS and high in calories and therefore can make you gain weight if too much is consumed, but they are actually really important to the human diet. We are made to eat animal fats and we need them. Another good book on the topic is Jennifer McLagan's book, "Fat." It is really enlightening and offers a great perspective.

So, throw away the shortening (hydrogenated oil, though new ones are now made without hydrogenation) and bring on the lard and butter! They have great flavor and in moderation are actually good for you!

So, does anyone actually have a recipe for lard shortening? It's something I've never tried, but I would love to do so.
