How to tell if an older hen is still l laying?

What if hen stopped laying for nearly 2 yrs, but has recently started laying again? Have hen (7y/o) who recently, (last math) began laying again. Have never heard of that, being most put their hens down, butcher, cull, whatever one wants to call it, when they stop laying.
Any ideas on what’s going on w/this older hen would be greatly appreciated. Thanx much!
