I noticed you said you were trying to "sync" the two thermostats. that is your problem. One thermostat is used to regulate the temperature the other is a backup that you set kind of high... it is used as a backup in case the one thermostat sticks and lets the temperature run away.. so the backup then kicks in and stops the temperature from getting too high.
Set the backup to about 102 and set your main thermostat to 100.5
With that being said. I would replace the old wafer therostat setup with a electronic thermostat from GQF it will greatly increase your hatching percentages. They hold very stable temps.
