Have something in writing for your veterinarian; don't expect the sitter or your vet to 'know' exactly what you would want done in every situation! It would be nice if you were reachable, at least sometimes, for big things.
Do you also have a neighbor or nearby family member who can check up on things? And maybe take some eggs home?
If the sitter isn't there 24/7, and I assume not, having an extra person checking up on things helps.

I usually have a notebook sitting on the kitchen countertop, complete with all the instructions, all major maintenance info (HVAC, plumbing, reliable contractors, etc.), list of neighbors/relatives and their contact info, and have my keys appropriately labeled. At the barn, I have ANOTHER notebook with all critter care info, plus photos of each chook with her name to help with the nightly head count (I have two coops), timely supply of all feedstuffs and bedding, and I label coops, people doors, barn doors, etc. with neon-colored labels so pet sitter knows "east barn door" from "south slider", etc.
