Leftover turkey suggestions???

Mole.
It doesn't taste like turkey when it has been marinating in a good, spicy, rich mole.
I made Mole Poblano last year, but it took me three days and it has 28 ingredients. It was worth it, because it freezes well and makes a great gift, but I have not had the energy yet this year.
 
Turkey Chili, Turkey Potpie, Tukey Bao, Turkey Tetrazzini, Turkey Enchiladas or tacos. We were cleaning out the fridge tonight and my son pointed out that our choices were turkey soup, turkey chili or turkey potpie. I think we've used up most of it finally!

just today for lunch I finely diced a generous handful of turkey breast meat, a roma tomato, a bout a dozen stems of fresh cilantro, minus the stems, mayo to taste, generous sprinkles of black pepper and Lawry's Seasoned Salt. Made open faced sandwiches on toasted Orowheat Extra Sour Rye. mmmMMMMmm!
 
Has anyone suggested gumbo? I made a pot today, cleaning out the freezer of left-over baked chicken wings, smoked turkey wing meat, and Italian (turkey) link sausage. Shrimp would have been good too but I didn't have any. With the vegetables, it is a big pot of good eating for a couple of days.
