I was just wondering the same thing. I read on the Nigerian Dwarf Standard that there is no preference for eye color when judging.

That makes sense. But it's still kinda dumb but I guess people consider it like blue eyed dogs? And especially since a lot of Nigerians are going to be pets rather than just farm animals, people consider it appealing and/or can get away with charging more?
