Letting quail rest before freezing

How long should I let quail carcasses rest in the fridge before freezing?

I rest them for three days in a lightly salted water bath in the refrigerator and change out the water each day. You can always test by pushing the legs in toward the body, when they flex easily at the joints, they are ready to eat or freeze.

I do 1-2 days. Haven’t done the salt water bath, but that’s inspiring me to brine my next batch before grilling.
