I want to do something like this!

I love videos like this, I only have one bioactive currently, it isn't even planted so it's very basic, not a full bioactive. Just wood, leaf litter and substrate, a drainage layer, clean up crew, my pet roaches.
I have to drop food in for the roaches and I water it occasionally but that's it. Generally it looks after itself. Anything the roaches don't eat, or poop out, the springtails and woodlice clean up!

I guess I can see the goose thought, since they hiss, but what part us suppesed to be chicken? The red skin?

Yes. Although I'd say the caruncles are more similar to turkeys, personally.

That bioactive if you have the springtails and woodlice/isopods. Doesn't need to be planted.

I've been thinking about grabbing some soil from our forest to experiment with something like this.

yeah, they see red on their faces and think oh it’s a chicken
