You might want to look into growing pot in that greenhouse. Good cash crop. I don't know what the regs are for wholesale, but might be easy money?
LOL.... I think the original owner was doing exactly that.... I might grow the limit for home consumption... I hear its awesome for arthritis sufferers... not interested in a full scale operation.

California has just started with legal recreational use... I am too close to the border and some unsavory people on This side... The Desert tends to attract people who want privacy for what ever reason...

Just for the record When people ask me if I were afraid of the Illegals crossing through my area... I say NO. I am more afraid of the locals than the illegals.

I just want to fix the house up so that it is safe and comfortable raise what I can givin my limited mobility and age... Be off grid as much as I can and enjoy the rest of my life... Which could be a very long time... Right now I am caregiver for my 102 year old Grandmother. Longevity runs in the family.

Deb, do you hunt or fish at all?

I don't but that could be one way of increasing your protein stash.

We get a few Mule deer that come visit the alfalfa stack periodically... California Quail up the Cazoo... Fishing ? You have to have water like lakes or streams or ponds .... sigh. I think the quail are protected... and unless someone would kill it for me... I couldn't hunt deer. I do love venison though.

But we got RABBITS... Three kinds... Bush Bunny, Cotton tail, and Jack Rabbits.... Only Jack rabbits are open all year. Also Rattle Snakes.... One good sized rattle snake Is enough protein for a couple of meals.

reading the regs... outside of Jack rabbits and Rattle Snakes I think I will pass I think I can raise enough poultry to satisfy most of my needs.

I am only me.... no family... Eggs poultry the occasional snake or Jack rabbit... Beans and rice and what ever I can grow either in a raised bed or Aquaponically... And of course Tilapia Its warm enough to grow them to maturity most of the year.

I have a very old small 7ft by 20ft camper that I'm fixing up to make it livable. My current situation is so up in the air that I may need to move to an RV park for a bit with my ducks until I can find something better. If I can find one to let me have them, I'd be keeping them inside with me at night and in pen outside during the day - so they get fresh air.
That's like plan c. Plan a is finding property that I can afford and building on it, plan b is renting a house at a reasonable per month.

LOL I primarily keep my birds as pets... If I start processing my own I will buy chicks bred for that purpose... Meaties ... for wont of a better expression. Besides IF i ever had someone come live with me my birds their birds would be housed separately.... No chicken will be able to free range here... Too many predators. I actually had a coyote take my last hen while she was happily kicking about horse maneure.... NOT twenty feet away from me.... Horse was standing there watching too.

My five ducks are pets - I only let them free range within hand reach and rake swing reach - once I have my own place again, they'd be inside with me at night and out safe in their pen during the day.
