here is an idea that I got from a poulty company. To contact local "poultry" or farm colleges. Google "Poultry Sciences" I live in Texas and I will take my chickens to Texas A&M for processing by the students. So if you need a processor, contact farm colleges in your state. Good luck all. Here is the response that I got below

I found a possible source for processing here is an email I got ...

Good luck anyone in Texas I live only 45 minutes from College Station.

Mary Ann,

######### here is the reply below ##########

Some of the students at Texas A&M University Department of Poultry Science would likely be more than happy to process your birds. They have the equipment and man power. I would give them a call. Their number is available at gallus.tamu.edu.

Thank You,

I doubt the students are inspected and certified.

oh, i had thought it was the processing area that is inspected and certified. my neighbor down the road has a state certified processing license. he's not usda certified because he doesn't have a walk in cooler and that's one of the criterias. i know a&m has a cooler since they let the high school ag groups use their coolers for meat cutting competitions. but i could be wrong.
