Assuming that you are incubating chicken eggs, you can start lockdown anytime that you want to around the 24th of May. It is not critical that you start lockdown at a specific time on the 18th day of incubation.

if you put the eggs (Chicken eggs = 21 days to hatch) in the incubator on the 6th, day 1 was on the 7th, which means you should be expecting hatch on the 28th +/-. I'd say start your lock down on the 25th, I don't believe the hour really matters that much.
