All my logs are just trees I recently cut, bark on, knobs, and not the straightest, straight from the woods kinda lumber and I don't have a bunch of equipment to straighten it out

It can be done but I don't have a clue as to how log cabins are built. If humans can live in it, so can chickens.

The wood needs a year or two to dry out or you will have ‘shrinkage’ to deal with that will require caulking.

There old ash trees that have been dead for a few years, not sure if that will help that at all

YouTube has ton a videos how to cut logs length wise so you can stack them. Sort of a DIY sawmill.
