Looking for advice.

Welcome to BYC. I've never had an issue with the cats around here, however, I have heard of feral tom cats attacking chickens. Since polish have limited vision I would suggest that you only let them range while you are in the yard with them. Owls, hawks, raccoons among other predators are also in most residential areas.

We have a few cats, and they mingle with the chickens but I'd not trust them around baby chicks.

Your polish are like my silkies, in that they get large crests and can't see. We used to cut their eyes with a kitchen scissors, as after you do them once, they are way calmer the second time, yet, I was still so afraid I'd poke their eye sometime, so hubby got out his cordless razor a few years ago, and that was the cat's meow! We've been doing it ever since. Someone asked me to show it once, so we made a YouTube video of it to show how easy, even on an apprehensive chicken. It gets way better the second time they get shaved.
