Looking for an easy recipe that uses lots of eggs, the whole egg.

vehve: That is also a good idea. Usually if we have leftovers they get thrown out because if they sit in the fridge a couple of days, no one will eat them. Not gone the next day? I might as well toss them.

We have a classic Finnish/Swedish dish here called Pyttipannu/Pyttipanna, basically means "Small things in the pan". It's traditionally pretty much all the leftovers from the week, but the basic structure is taking some boiled potatoes (maybe half a kilo), an onion or two chopped, some sausage and/or bacon diced (maybe 300g) and frying everything in a pan, season with pepper and salt if needed. Then you serve it with a fried egg on top of every serving, together with pickles and pickled beets. But you can add or substitute with carrots and all kinds of meat leftovers or whatever else you have lying around.

Dill pickles? Sounds like it would be dill pickles.

I LOVE pickled beets! I might have to go buy some potatoes but I have sausage. My husband and I will eat this but the kids might fight it. LOL

That looks yummy, might have to try that. Sort of a humongous oven cooked omelet with everything but the kitchen sink in it. Looks like a good way to dispose of all leftovers.

Whatever you've got handy works =) The basic idea is to use leftovers. Personally I can't stand things pickled in vinegar, but you're supposed to use them with this dish. I think I've used paprika at some point, should be fine in it too. You can make it with chicken or meatballs or even kebab meat, or beef or pork or if you find some, unicorn meat

The dish has started as a way to get rid of leftovers, but the recipe I gave is sort of a refined version, that is often found on the menu of Finnish lunch restaurants. Oh, and sweet potatoes, or any other root vegetable resembling thing would work too. And I suppose you could use eggplant or zucchini too. And sometimes at school I remember they used to throw in leftover pasta dishes, although I wouldn't recommend that...

Now I'm getting a horrible craving for pyttipanna, I might have to make it tomorrow.
 
I know it's been a few days since anyone posted, but when I have extra eggs I make muffins and freeze them in packs of four or five (I do mini muffins). I make carrot, spinach, apple, mixed berry.... Usually a mix of carrot and whatever other fruit or veggi I need to use up. I just pull out a pack of muffins to dethaw when needed (I have a daycare and all the kids love when I make muffins!). I'll also put them in a backpack for hikes, or take some on road trips or camping. I just took a carrot muffin recipe that's low in sugar and add whatever I want. I'm surprised how fast we go through them! I have to make some today with the over ripe bananas I have!

That sounds healthy... I'm more of a "How much chocolate can I jam in this" kind of guy
