Looking for an easy recipe that uses lots of eggs, the whole egg.

When I have a surplus, which isn't very often, I make egg salad. The children weren't crazy about it until I started adding a little dijon mustard, and sometimes some finely minced jalapenos. Another vote for Quiche. Also custard uses some eggs.

Why won't your children eat your eggs?!
 
Okay, I make chicken and egg wraps (my own recipe.)

I use soft taco shells
Scramble a few eggs (enough for a few people.) Add a bit of water or milk if desired. (can be done in microwave.) Season if desired.

Add some shredded meat like ham/ bacon/ chicken

Put a bit of shredded cheese (mozzerella or monterey jack) into shell, dropped in cooked scrambled egg and meat. Micro for one or two minutes to reheat (depending on your settings). Put some shredded cheese over everything, heat 30 seconds to lightly melt draped cheese. (You can add avocados or tomatoes too after heating, if you like.)

Low cal Ranch dressing put on lightly makes a great sauce, and you don't have to heat it. I've also used chinese hot sauce, mexican salsa- it's all good over the top. Just don't make it too wet or it will drip.

You also could use chili (eggs on bottom) in a wrap. Add shredded cheese and some sour cream. The chili will wet coat the eggs.

Also, look up "Strata" recipe online.
It is slightly complicated procedure, but uses like 30 eggs in a large dish, so a small family could eat the casserole for nearly a week. It is actually considered a brunch food, but I have made it for dinner many times (especially in winter). Talk about using up eggs! lol
 
There'd be some mighty hungry people in my house if that were there attitude - I must just be a mean mom.

I don't think so. LOL They don't eat all that many eggs anyways. My kids were raised more on oatmeal while my husband and I were raised more on eggs and bacon. Plus, you are probably a lot younger than me, the kids living with us are our oldest 3 grandkids. 20, 18 and 17.

I just call it a crustless quiche.

Thank you for your variations on egg salad, I will try them.

I think the reason they won't eat them is that these eggs are "in your face" where they come from. The eggs from the store, you don't see where they come from. They also say they don't like the taste. I can remember when I was a kid, that I didn't like fresh eggs. I think when you are a kid that maybe your taste buds are stronger. I used to hate liver and walnuts. Not at the same time. LOL It must have been because the taste was stronger because now I eat both.

Okay, here's my trusted Strata recipe:

Strata (Also good for breakfast, brunch, lunch or dinner) 350 degrees for 45 minutes 9" by 13" baking dish


4-6 cups leftover bread in small chunks
Eggs 20 divided (10 + 10) Use more scrambled eggs on last layer if needed (Can be up to 10 more eggs.)
1 cup milk or cream (or, can also use 1/2 cup water if desired)
8 oz grated cheese (Monterey Jack or Mozzarella) or sliced cream cheese
4-6 oz meat (ham, cooked sausage, chicken, bacon etc.)
1 large chopped onion, sautéed
8 oz sliced, sautéed mushrooms
1 can diced tomatoes (drained) (or 8-10 sundried tomatoes)
Can use 10-12 asparagus/ or 1/2 bag fresh/ frozen spinach or broccoli/ frozen artichoke hearts
1 cup shredded hashbrown potatoes (optional.)

1) Butter 9" by 13" baking dish
2) Beat 10 eggs- milk, add/ stir in leftover bread chunks to wet them, pour on bottom of greased baking pan to absorb and soften bread for 20 minutes. (Usually by the time everything else is cooked or prepared, enough time has elapsed anyway.)
3) Add cheese layer (can add chunks of cream cheese to this layer if desired.)
4) Add sautéed onions to layer
5) Add sautéed mushrooms to layer (Hashbrowns on this layer if used)
6) Wilt spinach (or other greens), layer
7) Meat
8) Add canned, drained tomatoes
9) Add cheese layer
10) Add remaining 10 scrabbled eggs to wet and cover everything. Add more eggs if you need them. Don't cover.
11) Season if desired. *I usually add salt at the end to minimize salt intake.*

350 degrees for about 45 minutes. Check at 30 minutes


This is a very substantial and hearty meal. I also like this with a red or white sauce option. Excellent leftovers. Can be cut and frozen in servings too.
 
@One Chick Two That looks yummy, might have to try that. Sort of a humongous oven cooked omelet with everything but the kitchen sink in it. Looks like a good way to dispose of all leftovers.
