Okay, here's my trusted Strata recipe:
Strata (Also good for breakfast, brunch, lunch or dinner) 350 degrees for 45 minutes 9" by 13" baking dish
4-6 cups leftover bread in small chunks
Eggs 20 divided (10 + 10) Use more scrambled eggs on last layer if needed (Can be up to 10 more eggs.)
1 cup milk or cream (or, can also use 1/2 cup water if desired)
8 oz grated cheese (Monterey Jack or Mozzarella) or sliced cream cheese
4-6 oz meat (ham, cooked sausage, chicken, bacon etc.)
1 large chopped onion, sautéed
8 oz sliced, sautéed mushrooms
1 can diced tomatoes (drained) (or 8-10 sundried tomatoes)
Can use 10-12 asparagus/ or 1/2 bag fresh/ frozen spinach or broccoli/ frozen artichoke hearts
1 cup shredded hashbrown potatoes (optional.)
1) Butter 9" by 13" baking dish
2) Beat 10 eggs- milk, add/ stir in leftover bread chunks to wet them, pour on bottom of greased baking pan to absorb and soften bread for 20 minutes. (Usually by the time everything else is cooked or prepared, enough time has elapsed anyway.)
3) Add cheese layer (can add chunks of cream cheese to this layer if desired.)
4) Add sautéed onions to layer
5) Add sautéed mushrooms to layer (Hashbrowns on this layer if used)
6) Wilt spinach (or other greens), layer
7) Meat
8) Add canned, drained tomatoes
9) Add cheese layer
10) Add remaining 10 scrabbled eggs to wet and cover everything. Add more eggs if you need them. Don't cover.
11) Season if desired. *I usually add salt at the end to minimize salt intake.*
350 degrees for about 45 minutes. Check at 30 minutes
This is a very substantial and hearty meal. I also like this with a red or white sauce option. Excellent leftovers. Can be cut and frozen in servings too.
