Lost a customer......

I'm sure you'll find someone to replace that customer, their loss!

On peeling. You simply cannot peel these fresh eggs, no matter the usual tricks, such as salt in water, ice packing, etc. The membranes just haven't had time to shrink back from the shell like month old eggs do at the grocery store. Our customers are free to leave a dozen, for boiling, in the back of the fridges for a month or 6 weeks, and they'll be just about right.

I have also heard this from a friend of mine who's been raising chickens for years, she says she leaves hers for about 2 weeks and then has no problem peeling them after boiling. I'm not sure they'd last that long at our house, my 18 month old can eat 2 scrambled eggs in one sitting and still ask for more- she LOVES eggs.​
 
I have so many people fighting over my eggs that it wouldn't bother me. I'd rather sell them to those people who appreciate what they are getting. Let them go back and get the grocery store eggs. If they can't taste the difference, then that's just more eggs for my appreciative customers. Just tell them that your eggs are harder because your chickens are well fed and have plenty of calcium in their diet, unlike the egg factory chickens... and FRESH eggs are harder to shell than month old grocery store eggs. Their choice.

I find it comical that people have forgotten what real food should taste like and are now comparing it to the grocery store cardboard that passes as food these days. In my area, (Norht West Puget Sound) there would be a literal line for home grown quality eggs. I just started with chickens and am 6 months away from a first egg and I already have 6 families who are lined up to buy the eggs. I would not worry about customers like that. If they don't appreciate your product, they don't appreciate you, so you don't need people like that around you. You will find a new client before you know it unless you are completely surrounded by people who like fast food and don't see the benefits of real slow food. I don't think there is a place like that anywhere in the world.
 
Well, darn, that's too bad a buyer walked, although what they said does sound more like an excuse rather than a reason. Some people just won't be satisfied with quality, I guess. (Today I dropped 2 eggs at different times

I also age mine a 2-3 weeks in the frig for hard boiled, and they're still much fresher and nicer than store bought. After they're boiled I crack them all over then ice them down in the pot for a few minutes until chilled. The shells peel off smoothly.
 
Ok, this newbie-lurkers mind is boggled by the idea that I would have to leave eggs in the fridge that long...and that store bought eggs are that old...and I am thinking I need to stop researching and build my darn coop already, cause I don't wanna eat those store bought eggs anymore!
