"Louisiana "La-yers" Peeps"

I decided to dive into one of the pumpkins. I cleaned it all out and trimmed out the stem and one bad spot. I put the pieces in the oven for about an hour and then took it out to cool. Peeled and cubed it came out to be 21lbs!!! One pumpkin!!! All the hens and even the chicks enjoyed picking through and nibbling on the inners :) I am very surprised at how juicy it is now once it is really cooking. I have never cooked this kind of pumpkin so I am curious to see how maybe some pumpkin butter would come out. BTW a GREAT tip that I came across just the other day.......to clean the inside of any type of fruit like this use a flat canning lid. I used a wide mouth one and the sharp edge worked like a DREAM! Fast too.
Do you have a recipe for pumpkin butter that you like? Please share!!

One pumpkin sure makes a lot! 12 cups of very well drained smooth puree for pumpkin pie or whatever else. I drained off 2 1/2 quarts of extra liquid so I won't have to do it later. And 5 1/2 half pints of pumpkin butter. It probably would have been 6 if we could have stopped tasting it so much! I feel blessed by all this pumpkin :) I like the Butter a lot. But I am not sure if its the holy grail of recipies since I have not made it before. I think it will be cool to try the same type of recipe with orange and maple instead of the lemon and b sugar. Then I can compare. And maybe one with orange, white sugar and rum. Pumpkin Butter 4 quarts fresh pureed pumpkin 2 lbs dark brown sugar zest of 2 Meyer lemons juice of 2 Meyer lemons 1 heaping Tablespoon grated fresh ginger 1 Tablespoon cinnamon 1/2 Teaspoon ground clove I used fresh pureed pumpkin that was plenty juicy, not dry. Add remaining ingredients in the crock pot and bring to a simmer. Turn lid sideways or remove if the butter will continue to bubble. Allow excess moisture to evaporate and simmer to desired consistency. Fill jars and add lids. Cool and refrigerate.

You might could do it & freeze it – otherwise, you have to can it in order to preserve it any length of time. I’ve never fooled w/pumpkin or sweet potatoes so no help there, sorry!

Just found out they are painting new stripes on our parking lot tomorrow so we have to move our cars by 5:00. My boss said that was a good excuse to leave early & I totally agreed with her, so that’s our game plan! And we’re closed Monday for Veteran’s Day – which also happens to be my Mom’s 83rd birthday, so I’ll be able to spend time with her & make her a chocolate cake! Whoo-hooo!!!!!!

Lucky you getting off early and off on Veteran's Day. :/ I may bake some pies and freeze them as well.
 
I picked another whopping 6 eggs on yesterday. Egg orders are coming in this week and guess what? I don't have the eggs to fill the orders. Lesson learned from going out of town. :/
 
I hereby grant you a box of matches !! I got special clearance from you Dr. To Burn a few controlled fires till your anger subsides. There is no excuse for not feeding your animals. Is there a chance she has dementia? Go burn a fire an release that anger it will only make you sick. Pam


A friend and I were talking and we discussed dementia. I think that could be a contributor to what happened. I think it was too much for her to remember and she didn't want me to write anything down for her, so I"m not sure how well she can read. So to have to care for 300 animals may have been too much for her to deal with. :/

I got 1 egg yesterday - out of 17 hens. 3/4 of my flock is moulting. Backyard looks like a featherbed exploded.


And I think it's going to get worst with the time change.
