Meemaws Raw Apple Cake

2 1/2 c. flour
2 c. sugar
3 c. raw apple (sliced)
1 1/2 c. oil here Mom says she makes a substitute she adds 1 c. more apple and 1/2 c. less of oil said it evens out moisture-wise and "mucho bettero" I will attest to so "my yeah"
3 eggs
1 tsp. salt
1 tsp. soda
2 tsp. baking powder
1 tsp. vanilla
2 c. chopped pecans

Pour oil in bowl, add sugar, eggs, vanilla. Then add dry ingredients. Add pecans and apples. Mix well. Pour in a greased 10 in. tube pan (she uses a bunt pan). Bake at 350* for 1 hr. or until done.

and then back you ears and dive in. oh ya'll I hurt myself over this cause I don't ever wait for the rest of my food to settle enough before gorging it, and if there's any left over at way too early in the morning esp if its(apple cake) in the fridge and cold milk. well... I just give myself another stomach cramp LOL no wonder I feel so bad sometimes, I abuse myself way to frequently not from malnourishment over nourishment, LOL

Yep, you are surely right. I experienced that about 2 years ago when I had a lone poult on a wire bottom. His toes are crooked-er than a politician. I learned my lesson with putting them on wire bottom only. Now I place this rubber shelf lining on the wire bottom so they have something to walk on that is not so hard on their feet. No more crooked toes after that. And the good thing about the lining, is I can take it out, hose it down, let it dry off for 5 minutes and re-use.

Thanks for the great idea, with news paper hard to find that will work great

If I didn't know any better I would think something got a hold of my flock Do they all have to molt at the same time

yum yum yum!!! and here's what I made this afternoon, since I had 3 ripe bananas I had to do somthing with:

Banana Muffins
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup canola oil
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
Topping:
1/3 cup brown sugar
2 tablespoons all purpose flour
Dash of cinnamon
1 tablespoon butter

Preheat oven to 350. Line muffin pan w/papers.
Mix flour, baking soda, baking powder, salt, bananas, sugar, egg & oil. Spoon batter into muffin cups.
In a small bowl mix brown sugar, flour & cinnamon, cut in 1 tablespoon butter until mixture resembles coarse cornmeal, sprinkle mixture over muffins.
Bake in oven 18-20 minutes until toothpick comes out clean.

Awesomeness. My banana trees are falling over with fruit! Can't wait to try this :)

Jeff

Oh yeah and Granddays other banana favorite is just like youd make a coconut cake without the coconut you put the bananas in between the layers and smear all that white sugary boiled icing all over it, yes sir that was a regular staple around G'mas house, no special occasion needed just when one was all gone it was time for another LOL
