My favorite fig jam is with Orange zest, Orange Juice, minced up candied ginger and the chopped up figs, sugar and the pectin to make it gel. I usually just process the figs a bit with the food processor until they are still chunky, but not pureed. It is so yummy!

The very easiest fail proof way to make pickles is to use the Mrs. Wages pickle mix. Dill or Kosher Dill. The only thing I add to that is I use Pickle Crisp to help keep them from getting soft. When you use that mix the only other thing you need is the water and vinegar.Anyone got an easy pickle recipe?

I will have to look and see if I have anything written down. I don't think I do though. I usually just use the measurements from a different fruit and substitute. If I find something written down though I will post it.

That is the recipe that I kind of go off of to candy my ginger. You can also buy it candied. For that matter you could just mince up fresh ginger really tiny and add it to jam. But I love ginger!
I do and I love it! We like to just eat it as a treat. Really delicious! I don't cut it on a mandolin like the recipe says. I cut it all by hand. Nice thin slices across the grain with a very sharp knife.Thank you, do you candy your own Ginger?
